When you first load in, the game asks you to stock a few shelves to get the flow going. A round can take anywhere from 5 to 10 minutes depending on how aggressive you are with expansions. You'll wander the aisles, pick up stock, and place it on empty spots. It's peaceful, though I got annoyed when customers blocked a narrow aisle I needed to restock.
